I haven't posted in a few weeks, as wine making gets pretty boring there for a while ;) I have been browsing and reading the forum pretty consistently though.

I thought I'd fill you all in, I bottled my first ever batch of wine and it came out beautifully! I tasted it prior to bottling to determine if I wanted to sweeten it and was extremely pleased with the flavor! It's a little sharp/harsh yet but I think a month or two in the bottles will really do it some good. I bottled approximately 5.5 gals (originally 6 but lost a little in the racking process) and look forward to starting my next batch. I plan on doing a white - riesling maybe.

Anyhow, thanks to everyone who answered questions and offered suggestions, yooperbrew especially comes to mind but I appreciated all the responses to my questions! I'm sure I'll be on reading posts and asking questions in the future. I really enjoyed this process and look forward to broadening my scope of understanding!

SWMBO has suggested that instead of a white wine next that I give the apfelwein recipe a try. . . I can't believe she didn't just complain about the fermenter in the closet for the last 2.5 mos!!
