Well Im going basic for my first attempt.
4.5 gal Sweet cider
.5 Pear
2lbs honey
1lbs lt brown sugar
1 packet Laevin EC-1118 champagne yeast (not sure if I needed two or not but have that question out on the forums) Just answered only one packet of this type yeast it needed. But if using a ale yeast you may need two.
tblsp of Coriander (nice citrus flavor)
tsp nutmeg
2 tsp cinnamon
10 cloves
Dont want to much spice just hints so I went light on the spices
I also have some organic green apple concintrate I may add it the apple flavor isnt quite stronf enough. If I add it it will be in the amount of 1/4 tsp per gallon.
 
i heard champagne yeast can make the cider dry. in fact my brother did a cider with champagne yeast and it was very dry. but very nice apple flavor.
