So I have been brewing with a bunch of friends and we have 25 gallons of Flanders red ready to be put into a barrel. We plan on brewing the last 25 this week.
So we found some old whiskey barrels and they just don't smell right... Like poop. I was up in northern Michigan this weekend and came across a brand new Bulgarian barrel for a great price. I have read that a new barrel can destroy a beer with too much oak and I'm worried bout trying to sulfur stick the whiskey barrel.
So what should we do? We're not too excited to brew another 50 gallons of something to try and mellow out the barrel. I've read about barolkleen too but I'm not sure if that strip out enough... Thoughts?
Oh and I can get more barrels in case anyone is interested...
