I’d like to try and clone (or get close) to New Belgium’s Sunshine Wheat. I’m brewing this for my buddy’s going away party for his wife. I’m not confident doing an All-Grain since he is paying for it (and I'm still working on my AG setup), so I need to stick to extract. Below is an excerpt from New Belgium:

SUNSHINE WHEAT is a great beer for trouncing thirst. Yet, it has a depth of character that inspires a quiet moment s reflection. Sunshine Wheat swirls in the mouth with ripples of coriander and orange peel tartness, settling nicely into a tranquil sea of apple and honey tones. A filtered wheat beer, Sunshine offers a crisp, refreshing alternative to heavier-bodied heffe-weizens.

ABV - 4.8%

IBU - 14

Calories - 145

Hops - Target

Malts - Pale, Carapils, Wheat

OG - 13.4

TG - 1.9

Fruits/Spice - Orange Peel, Coriander



My proposed 5 gallon extract recipe is:

Steeping grains for 45 min
.5 Carapils
1 lb Honey Malt
.5 Belgian Pale Ale
3 lbs Light LME (or DME?)
3 lbs Wheat LME (or DME?)
1 oz Target Hops @ 60 min
.5 oz Target Hops @ 15 min
1 oz sweet orange @ 20 min
.5 oz crushed coriander @ 20 min
1 tsp Irish Moss @ 15 min

Danstar Windsor Dry Yeast

Some feedback would be great. I’m open to suggestions and I’m not sure about using DME or LME.

My goal is to keep is tasty and inexpensive. We will be playing cornhole and BBQ’n all day so having a great summer/outdoor brew is key as well.
 
Here is the recipe I have been using and I think it is close. I sub the candi with a 50/50 mix of table sugar/dextrose and the orange peel with zest of 1 medium orange. Also used Orange Blossom honey straight in to the fermenter. Turns out great every time.

Notes:

1/2 oz coriander crushed and added for last 5 minutes of boil. Use the honey in the fermenter only and use orange blossom if you can get it.The last 1/2 oz. of coriander should be lightly heated in a skillet to loosen the essential oils, crushed and added to the secondary. The spice version of dry-hopping.
