Hello world!

I would try to brew 3 pumpkin ale recipe next week. 5 gallons per recipe.

I think to start from extract kit. 1 porter, 1 light wheat and 1 otmeal stout.

I have almost no idea of the quantity of pumpkin and pumpkin spice I need. Do somebody has a recipe and could guide me? I make 3 brew just to test different flavor. I love my pumpking ale when it really taste pumpkin/spice, really like pumpkin pie :) . When do you recommand to add spice and pumpkin? mash? boil? fermentation or before kegging?

I'm going to go pick pumpkins this week and freeze them to make beer all year round. So i guess the first try will not be the best.

I have only 15 brew now, so any advice are most welcome!

Thanki

there are as many pumpkin ale recipes as there are brewers. This is the one I finally landed on

1# brown sugr
1 oz hallertau 60min
2 tsp Ginger 15
1 tsp nugmeg 15
1 tsp cinnamon 15
1 tsp allslice 15
3 whole cloves 15

If you're extract with steeping grains sub out the base malt with an appropriate portion of golden extract.

Yes there is no squash. Te pumpkin itself has very little actual flavor What you recognize as pumpkin flavor comes form the spices.
