First recipe i post here. Also, one of my first homemade recipe's (so much great ones here to brew! )
Been brewing for a little over 6 months now. This was my 13th brew.
Had some Rye on my hands and wanted to test it out.
So here it goes:
Brew House Efficiency: 67%
GRAINS:
4.00 kg Pale Malt, Maris Otter (Thomas Fawcett) (3.0 SRM) 49.4 %
2.75 kg Pilsner (2 Row) Ger (2.0 SRM) 34.0 %
0.90 kg Rye Malt (Weyermann) (3.0 SRM) 11.1 %
0.45 kg Carafoam (Weyermann) (2.0 SRM) 5.6 %
HOPS:
15.00 g Bravo [15.50 %] - Boil 60.0 min 20.1 IBUs
28.30 g Citra [12.00 %] - Boil 10.0 min Hop 10.6 IBUs
28.30 g Cascade [5.50 %] - Boil 5.0 min Hop 2.7 IBUs
28.30 g Galaxy [14.00 %] - Boil 5.0 min Hop 6.8 IBUs
DRYHOP:
28.3 g Citra (2 days into fermentation)
OTHERS
1.00 Items Whirlfloc Tablet (Boil 15.0 mins)
YEAST
1.0 pkg Safale American (DCL/Fermentis #US-05) [50.28 ml]
28.30 g Citra [12.00 %] - Dry Hop 10.0 Days Hop 11 0.0 IBUs
0.83 oz GrapeFruit Zest (Bottling 0.0 mins)
Hops(Citra): Dry hoped while active fermentation on day 2 .
Grapefruit part:
Tincture:
Used 3 costco grapefruits (huge). Zested them and throwed in a mason jar with about 3-4 oz of vodka (enough to cover the zests)
Shake them a couple of times a day (left them on kitchen counter and would give a shake while passing by)
Do this till bottling day. Filter and dump in bottling bucket.
Bottling Sugar
This is a bit more sketchy. Followed this guide:
http://www.seriouseats.com/recipes/2016/03/fresh-lemon-syrup-recipe.html
Basicaly, i added the priming sugar over the squeezed grapefruits(keep juice for a nice drink latter on).
Over 2-3 days, the sugar absorbs the fruit's humidity and makes a sirup. Squeeze it all out of the fruits and filter/transfer to jar. Keep in fridge till bottling day and boiled.
This part i aint sure if i would repeat. It doest add some flavor since the sirup is strongly grapefruity, but also took so much time to carb. 1 month latter not all my bottles are carbed. I would probably skip this part on a next batch, or combine the sirup with a bit more sugar on bottling day to even out.
Results
Aroma: Strong Grapefruit juice. Smells so fresh combined with the hops.
Taste: Really nice grapefruit taste, not too strong. Acidity is on the low even for that much citrus, combines well with the IBU's and Hops.
Eveyrone that tasted it went bonkers and asked for more. This will be a summer tradition for me.
