So I started a cider a while back. Put some ground cinnamon and clove in it. I think the clove is a little strong, but not overpowering. I racked them off of the spices last week and am letting the fermentation finish out. SWMBO expressed interest in making the cinnamon flavor a bit stronger and less clove. Should I drop a 1/4 cin stick in and let it stew? will the clove mellow a bit over time?
