Pressing 90 pounds of apples tonight!!!

30 pounds of braeburn and 60 pounds of Fuji. Picked em up at the local farmers market in a close out sale for $50.

They sat in cold storage for the past 2-3 months so I’m hoping there is lots of sugar buildup.

Planning on splitting between 2 different batches. 1 will get Nottingham yeast the other will get QA23. Both will get oak spirals in secondary.

Done with the apples, glad I bought some extra fresh pressed AJ for topping off. Got 8 gallons in all, that was a TON of flippin work!

OG is 1.055, thinking of topping off with some AJC to get OG up to 1.08 range. The fresh pressed juice had a very cinnamon aroma. Hit them with k-meta tonight, tomorrow night will be pectin enzymes and Sunday will be yeast time.
