I have beer in a keg and did not use any finings yet. Why can't I draw some beer from the keg and mix with gelatin instead of water and add it back in?

Nothing prevents, but keep in mind that beer has CO2, alcohol, non-fermentable sugars, proteins. ..... All these things are competing for water, which can be a problem to dissolve the gelatin. Using clean, sterile water ensures that all gelatine will have complete solubility.
