So I am looking to build a new'er HLT for my HERMS system. I have read the posts where what people have done, using both plastic buckets and SS pots. What I would like to know is what people wish they would have done differnet...mainly the people that have used plastic.

I am leaning towards using plastic, mainly because it is cheaper. In using plastic, I would have no option but to also install a heater element, where if I used a SS Pot, then I could still use a propane burner to heat it.

Just want to see what people which they would have done different..

That is a good point...some of the issues I have read was using plastic having water up to 190+deg...you might get off flavors not to mention getting some chemicals into something you are going to drink..

Is this a valid concern? I know most food safe buckets are HDPE (recycle #2).
 
It sounds like you want to go with electric. Why not put an element in an aluminum pot?
