So here is one that I am sipping on that my "test market" and I all thought was pretty good! I am almost exclusively All-Grain, but I had some extract laying around and wanted to do something fun with it! I am going to try aging on some other types of wood as this turned out pretty successful. It added a flavor, but wasn't overpowering like I think sometimes Oak is. I got the mesquite from Lowe's!:cross:

Notes

This was pretty good.

Boiled 4 Oz. of Mesquite Wood for 15 minutes. Added DURING fermentation. Removed when transferred to secondary after 14 days.
 
i brewed an all simcoe ipa and while it was certainly drinkable I didn't love the all simcoe hop profile. In a lot of recipes I see Simcoe as flavour hops added later and usually with other hops such as Amarillo, Columbus or Cascade.

Personally I think Simcoe work well in partnership with other hops for a great combined flavour but aren't great on their own.
 
I absolutely love simcoe by itself. I don't think there is any better hop.

1.068 is certainly not imperial. I am intrigued by the vanilla and mesquite. I would not have thought of doing this with an IPA, but I hope it works out.
