Due to limited time available Saturday I am considering mashing and sparging my next brew tomorrow night and boiling it Saturday morning. I have the ability to hold the wort temp at whatever is desired. My thinking is to keep the temp of the wort high enough to not have to worry about souring and such. What temp would be best to hold it at overnight? Will be for about 8 hours. Thanks!

Some of us do overnight mashes with no temperature control and don't have problems with that. I'd probably shoot for somewhere near mash temps only because it will speed up the next day a little.
