Mash grains in Apple Juice?

Hi there. I'm making a 1 gallon test batch of brew, and it uses apple juice as an adjunct. However, I want to mash 1.5# of 2-row in it, but I don't want to use 2qt of water in 1 gallon batch, so I'm wondering if there is any downside to mashing in apple juice. Will the amylase enzyme still work its magic? I couldn't find anything related to non-water mash process, so any help on that subject would be super. Thanks in advance!

Maybe pick up some frozen concentrate. Let it reach room temp and add to kettle at flame out to sanitize.
 
I'm thinking the PH of the juice would screw with the mash chemistry and conversion. But... only one way to find out.
 
I've done it, it works fine. I didn't check the gravity but it came out sweeter than when it went in
