I plan on making some Pork/ Deer or Antelope Bratwurst in the next few weeks using a Frisco brand spice mix. I’ve made breakfast sausage and Italian before but never Bratwurst. I was wonder what people’s preference regarding the lean/fat ratio might be?

I make a lot of sausage from game. I’ve been going with 50/50 with a pork butt to game ratio for several years now with great results. I use to use less pork to save money but the sausage was drier than my liking. 50/50 gives it a nice consistency without drying out on the grill and it stretches out your game meat to allow you to make more sausage. For snack stick I prefer them a little drier so I go with 2:1 game meat to pork butt. For my salami or summer sausage I use a ratio of 3:1 game meat to beef suet.
