Ok I have a few batches going on now, but looking for a good idea for something different. Today I put 4gallons of unpasturized apple cider pressed from 9 different types of apples. I have 5 other batches of cider going right now that I'm doing different recipes, basically a apple/cheery, and apple pie, an apfielwine, and another one that I think we are racking onto peaches. Long story short we are looking for some ideas for the last batch, we would like something kinda sweat, besides that we are open for ideas, thanks for any ideas you can give me. Maybe even a pumpkin?

Maybe try a hefty apple mead, cyser. Add enough sugars to get it to finish sweet. Should be pretty good, but will probably take forever to age.
