Anyone ever use this? Longan is a fruit found in Asia. Pretty tasty. My mom brought back about ~15lbs of this stuff from Taiwan. I'm excited to try it out and see how the mead will taste like. I'm hoping if it is good I can purchase longan honey in the U.S., but haven't seen any around.
 
Something that was recommended to me before i started brewing was that to taste the honey and to get a feel for it was to make a plain tea with it. Then you can add ingredients that you'll be using in your mead to the tea with the honey. Not an exact science but it does seem to be helpful.
 
Hmm, good idea on the tea. I think i'm going to do a traditional mead so I'm not going to add any fruits or extra flavors into it. I'm curious to see how fermentable this honey is compared to others
