Leftover ingredients, what yeast should I use?

My leftover ingredients consist of a perfect total quantity for a high gravity 5 galling batch.

8.75lbs 2 row
1.25lbs Munich
1.25lbs Vienna
.75lbs Aromatic
.5lbs Caramunich

I have some cascade, goldings, citra, and Amarillo, About an ounce of each.

I'm leaning towards using the cascade and goldings, and adding a pound of sugar to make something similar to a Belgium style. I also have 8g of American IPA, 6g of imperial oktoberfest, and 8g of hazelnut brown either fermenting or conditioning. Something different would be nice, I do like to have some variety to choose from.
