the dirty south
i gotta 11.5 lb leg of lamb, stuffed whole garlic cloves, pecans and some other herbs and spices. slow smoked it for a few hours with a lot of hickory until the inside of the meat was around 135-140*.garnished it with fresh spinach, carrots, and mushrooms. served with potatoes au grautin from scratch and homemade kuglehof.

and it all went very well with a 8 year old muscidine wine. they seem to work very well together. had a similar bitter/sweet taste.
