I've got almost 3 weeks into a Double Chocolate Stout and I have a 1.5 inch layer on the top that hasn't dropped in size in about 2 weeks. Airlock activity is about 1/min and when you tap the carboy, it moves as one fluid motion. I haven't seen this on any of my other beers and it has looked exactly the same for about 2 weeks.
I'm not trying to rush it, but after reading other posts... think this krausen is almost carmalized... it's seriously not moving. Really odd.
How long before i just punch through it with a siphon and bring it over to secondary? I'll wait as long as I need to... but I just don't see this dropping at all... I think this head is here to stay.
I know.. be patient. but I'm wondering if anyone has ever had a krausen just sort of... never fall?
