I want to start kegging but don't know where to start - is it as simple as filling up the keg and attaching the CO2 bottle or is there more to it ?

Yes, you still need to properly age the beer. How long depends on the brew (style and abv). I usually keg after 3-4 weeks, then age for another week or two before carbing and sampling. Just because you can carb it in five minutes time, doesn't mean it'll be as good a week after brewing, than it will be in six.
