At what temp can I turn on the co2 tank in my keg fridge? Also, how long do I need to wait before drinking?
 
I have only kegged once before, but with great results. What I did was cooled the keg to what I would be serving it at, ( a little above 40F but the colder the better). next day I hit it with about 25psi then rocked it back and forth for a few minutes and let it sit over night, I then dropped the psi to serving pressure (depends on style) and waited one week to drink. Kegged on thursday was drinking it the following friday. I may add that it was drinkable the next friday but a few days later it was perfect.
