Congrats! Make sure the probe is measuring beer temp and not ambient temp.

US-05 I highly recommend keeping under 65°F during fermentation. I find the esters very unpleasant.

For any yeast, different temps give different profiles, so it just depends what you want.

S-04 has a tendency to flocculate too early (before finishing fermentation) if the temp is kept too low. However you can warm it up and rouse the sediment to make it finish.
