Hey everyone!
I'm abandoning my stout due to it being absolutely awful. I'm putting, in the 1gal carboy, a pumpkin ale! Here are my ingredients

50/50 2-Row/6-Row Malt
Fresh Pumpkin
Malted Pumpkin Seed
Spices
Possibly honey

My questions!How much of each spice should I use per gallon? How much fresh pumpkin is generally used per gallon of ale? Is it better to mash the pumpkin or boil it with the wort?

Any other tips you guys can give would be awesome!
 
Its easier to boil, but if your only making a gallon I would put it in the mash, and either follow your nose or add a teaspoon to a tablespoon of mccormicks pumpkin spice
 
Does it make a difference in taste or mouthfeel?

I'm also thinking about malting the pumpkin seeds.
 
Per gallon, I figured out from an average pumpkin usage per 5 gallons, is about .8lb - 1.5lb per gallon of fresh pumpkin.
 
I roasted the seeds in the oven with the pumpkin this year and put them in the mash. Turned out well. I havnt carbed it yet, but i can taste the pumpkin through it all. I used pumpkin in the mash,60 and 10 min
