I have several single gallons of Flanders Red going with large oak pieces (3 inch lengths of oak staves) in them, and the same with several beers with Brett in secondary.
I have read that brett (and bugs) like to live in the oak. How would I save these oak pieces to have them available to inoculate new batches?
Do I dry them out (how would I keep them sanitized)? Do I store them wet (how do I prevent mold)?
Anyone know how good these would be to inoculate new batches.
