When I bottle my Hefeweizen and attempt to pour 3/4 of the bottle, swirl bottle and then pour rest to get that nice haze it just ends up swirling up chunks of yeast into the beer and really looks unapplealing. What am I doing wrong here?

Try just leaving an inch of beer at the bottom and really swirling the crap out of it. That works for me.

As the yeast gets more compact at the bottom from aging and sitting in the fridge, I find that it becomes easier to roust a tiny haze of yeast by swirling while having the cake remain. Maybe just let it sit in your fridge for a longer time?
