I have 12 gallons of Johnny Jump Up Cider going (2 batches of 6 gallons). I'd like to spice one batch with cloves and cinnamon sticks... i really wouldn't want to over spice it. I'd much rather it be on the light side.
Question's are:
How many cloves and for how long?
How many sticks of cinnamon and for how long?

You might want to do a search to confirm this but I believe 1 clove and 1 cinnamon stick for every five gallons is ideal. so in your case add one of each to both batches. Taste them after a week to determine whether or not the flavours are strong enough. If not, leave them for another week and taste again.

Be sure to soak the cloves and cinnamon sticks in spirits first, anything thats around 40% ABV will work.

I have some cloves that are real tiny, I used one Chinaman stick and around 6 of the small cloves.
Next time I will use around 4-5.
