How long to bottle carb after fining with gelatin and cold crashing

I'm having a friend over to brew his first batch and it will be bottled. I'd like to use gelatin and cold crash so the beer is very bright and to reduce the sediment in the bottles.

But I've never bottled after doing this. I assume there would still be enough yeast left. But maybe I need to add some more yeast? How long would it take to carbonate? It will be a 1.065 OG, 1.010 FG India Pale Ale. After three weeks in the primary I'll add the gelatin and cold crash for two days before bottling.

After cold crashing bring the beer back up to room temp, there is enough yeast suspended in the beer that it will carb.
 
Should three weeks at room temp be enough to carb the bottles after fining and cold crashing?
