Looks solid to me, but there is a lot going on so it is hard to tell just how well all the pieces will fit together. Brooklyn's Sorachi Ace saison is really nice, so I think that can definitely work. 3711 is a great strain, low fuss compared to the classic Dupont strains. I like to add honey post boil, the more heat it gets the less aromatics remain.

The Sorachi Ace is suppose to have a lemon like quality right? That will be really interesting.

What flavors are you looking to pull out of the white grape juice? It is an odd (but not bad) addition and I am curious as to your reasoning. It will be a different kind of beer, but one I would be excited about trying!

My hope is that I'll get a little bit of that flavor and sweetness from the grapes to help balance out that pepper and spiciness from the saison yeast. I had he'brew rejewvenator not too long ago and really liked how the grape flavor balanced the malts and hops. I'll keep you updated!
