How can I spice up wheat extract?

I have a Munton's unhopped wheat LME. I want to spice it up a bit by adding some additional flavor. Probably some orange zest for sure.

Anyone brewed a wheat using LME that turned out great? If so what did you add? Also, since the extract is unhopped, do you recommend adding hops or not since it is a wheat?
 
You could make something akin to a witbier. Orange zest and a little crushed coriander seed added at the end of the boil should give it a little zing. Be careful, it's easy to overdo it with the spices.

Edit: You asked about hops. Perhaps a noble hop, like Hallertau.
 
I did a wheat pale ale with wheat and pale LME. Used equal parts citra and Amarillo hops with the mangrove jacks hefe yeast. Turned out awesome.
