You could make a graff, going light enough on the malt to just get some head retention. CaraPils would work, I guess.

Maybe mash a lb of carapils with a gallon of apple juice? Then mix with the rest and ferment.. BIAB deal?

Are you hopping the cider? If you aren't, it wouldn't hurt to add a bit of two-row and dextrine malt (carapils) in. It will give you bit of protein if you mash to help with foam retention.
BYO has a good article in foam retention and how a bit of alpha acid helps bind proteins for foam. I'm posting from an old iPad and haven't figured out how to link articles....
