So I'm fairly new at brewing myself but I've noticed hot breaks can be a pain in the ass and i'm not sure if this is a common thing to do but a friend of mine bought a couple spray bottles and filled them with spring water and when the hot break time came spraying it a tiny bit controlled the foam quite well.
I've done it on nearly all my batches and i've only boiled over once and i use a 24 quart pot, the only reason that one boiled over was because i was reading when it happened and i wasn't paying attention.
Give it a try, you might like it.
