Hopfenweizen recipe critique, please

Just made this up on a whim. I'm trying to pair the banana esters of a hefeweizen with a big floral/citrus hop flavor. And I think I'm going to try underpitching (just the smack pack - no starter) in order to favor ester production.

Batch Size (fermenter): 5.50 gal
Estimated OG: 1.039 SG
Estimated Color: 6.6 SRM
Estimated IBU: 20.6 IBUs
Boil Time: 60 Minutes

Ingredients:

3 lbs 4.8 oz Wheat Liquid Extract [Boil for 60 min]
0.50 oz Goldings, East Kent [5.50 %] - Boil 60.0 min
3 lbs 4.8 oz Wheat Liquid Extract [Boil for 15 min]
0.33 oz Falconer's Flight [10.80 %] - Boil 10.0 min
0.33 oz Falconer's Flight [10.80 %] - Boil 5.0 min
0.33 oz Falconer's Flight [10.80 %] - Boil 2.0 min
1.0 pkg Weihenstephan Weizen (Wyeast Labs #3068)


I bought 2oz Falconer's Flight and I'm not sure if I want to save the extra ounce or use them in this beer as steep/whirlpool or maybe dry hop.

Thoughts?
 
I like the idea. At an OG of 1039, you're not underpitching by much. If you add 1-2 lbs. of amber DME, you'll get a little more richness in flavor and a little higher OG, which will make it more of an underpitch, playing up the banana/clove. You'd need to increase the hops amounts or boil times to get the same apparent bitterness.
