I'm planning an amber ale that I hope will be relatively similar to North Coast's Red Seal ale. There are a number of attempted clone recipes around on the net, and I have taken some ideas from several of them. I'm pretty much settled on the malt bill, but not quite sure about the hop schedule. Several of the clone attempts I've found uses mostly Cascade, but I will go with all Centennial. I read that Red Seal is supposed to be 42 IBU,s so I shoot for that.
It's a 13 l (roughly 3.5 gallon) batch, using biab at 65% efficiency:
3 kg Pale 2-row (78.5%)
0.4 kg Wheat malt (10.5%)
0.4 kg Crystal 75L (10.5%)
0.015 kg Midnight wheat (0.4%)

OG:1.058
IBU:42.4
11 g Centennial@60 min (20.95 IBU)
13 g Centennial@20 min (14.99 IBU)
14 g Centennial@5 min (5.31 IBU)
14 g Centennial@1 min (1.15 IBU)
Plus dry hopping in secondary, something like 2 g Centennial/liter

What do you think?
