Just tried an early sample of this beer. Gotta say it's my best brew yet. I was going for something with good ABV but still easy drinking, no harsh bitterness but full hop flavour / aroma. I didn't want this to accidentally turn into an IPA from too much hopping so the hop bursting keeps the IBUs in check while still giving great flavour.
Because Simcoe is such a high AA hop it also worked out cheap, and easy/quick to brew as well.
I was concerned that without any crystal it might come out a bit pale and meh, but it's got a really nice saturated colour to it. Good head retention as well.
I'm blown away that a recipe so simple can come out so good. This could easily become my house ale.
95% Maris Otter
5% table sugar (ok so not quite a SMaSH recipe)
OG 1.059 FG 1.008 for 6.7% ABV and 35 IBU.
Mash at 67c
Ferment with US-05 at 18c / 64f
1/2 oz Simcoe at 20/15/10/5 (for 5 gallons)
1oz Simcoe at flameout.
Another 1/2oz Simcoe dryhop for 3 days.
