I got ahold of a pound of falconer's flight a month or so ago and have been wanting to experiment with them. A couple weeks ago I brewed up 6 gallons of imperial IPA using only Falconers to get a feel for em. Here's how she looks:

15lb Cargill Idapils
1lb 40L Crystal
8oz Pale Biscuit Malt
2oz Black Malt

Mash 60 min at 152F

Boil 75 min:
1oz Falconers (11.4AA)-75min
1oz Falconers - 60 min
.5oz Falconers - 30 min
.5oz Falconers - 15 min
.5oz Falconers - 5 min
.5oz Falconers - 1 min

Whirfloc tablet last 10 minutes of boil.
Yeast nutrient last 10 minutes of boil.
US-05 with a H20 starter

Fermented around 164F
Projected OG - 1.071 / Actual - 1.073
Projected FG - 1.018 / Actual (after 16 days primary) 1.010!
8.27% ABV
15 SRM
88.8 IBU

Just dry-hopped it with another oz of Falconers that will sit in there for 7 days before I bottle.

Anyways......the last gravity reading I took, the beer tasted.......INCREDIBLE. I don't mean to toot my own horn but holy hell does this thing taste good! This is my new favorite hop....and I brew a lot of IPA.....a lot lot. I don't have a lot of close friends that are really into beer, and I had to vent. Will update after I bottle and let it sit around a month.
