I am relatively new to brewing, but have so far made 6 batches. I am not confident enough yet to use anything but fool-proof kits. I have been using beautiful Canadian made kits from a company called Brew House. Check out their site to see their awesome support and beer descriptions. www.thebrewhouse.com . I have had little luck with getting responses from other brewing forums, but you guys seem to be eager to help! I have made the follwing beer so far: Pale Ale, American Premium Lager, Cream Ale, Prairie Wheat, Mexican Cerveza and Canadian Light Lager. I followed the istructions as closely as I could and have had very good results! Since these kits need 8 liters (2+ gallons?) of water added, I am free to tweak them with boils of extracts, spices, etc. I almost put lime juice into the cerveza until all of the forums said "No fresh fruit or juices!". How do I get a nice lime aftertaste to this beer without screwing with the process?
 
Welcome from another fellow Canadian! Whereabouts are you located? As to your lime question, you may be able to find a lime extract flavouring you can use. Paddockwood has a fair number of flavourings available but I don't see any lime. You may see something else that interests you though.

You could probably use real juice so long as you pasteurize it before adding to your beer to make sure it has no bacteria or wild yeast. Someone with more experience will probably chime in, I'm just guessing.

Yes, I love those BrewHouse kits. I even make the odd one now and again when I don't have time for a full brew. They actually make really good beer, and like you say, they are easy to tweak. I have made most of their beer kits, and I like their IPA and Munich Dark Lager kits best. You can make a rocking IPA by reducing the water addition and dry-hopping it. The Munich kits make a really good porter or stout with a partial-mash. Great way to get into brewing and make really good beer!

Magnotta's FestaBrew kits are also good, but they are 23L of wort, so they aren't as easy to tweak. But the quality is as good or better than the BrewHouse kits.

I made a BrewHouse Cerveza kit, but used a lager yeast and fermented pretty cold, rather than the supplied yeast. It turned out pretty good, very clean, wife friendly.

For limes, I like them sliced and added fresh :)


I also prefer the Festa kits slightly. Especially for head retention.

Only took a few years but I finally found the spot where I could say where I was from on my profile! LOL! I still brew rhe Brew House and FestaBrew kits often, but have really started to play with them a bit. I also made 2 successful batches from scratch of gluten-free beer (dried rice extract, honey, molasse, hops and corn sugar). I have found another g-free recipe that calls for me to malt my own buckwheat! To date, the most successful batch was a Brew House red ale with 2 bottles of rye flavouring and a litre of steeped toasted oak chips. Tasted like Innes and Gunn (import from Scotland that conditions all of their beer in oak barrels).

There are Noble Grape's all over the maritimes too. Just recently found out they can get me grains and stuff for AG brewing locally for very reasonable prices. If you're in eastern Canada, I highly suggest checking them out.

Holy crap :) you're only a few hours drive from me. (Fredericton), glad to see someone who's actually involved in brewing "local" to me ;). I wonder if there's not more of us on here.

I don't bother putting my location details in any site, simply because I'm in computer security ;) so I'm naturally paranoid. But eh, here doesn't seem so bad, maybe I'll change my policy ;)

Emjay, while I agree it's a comprehensive store the cost of shipping via Canada post is absolutely prohibitive. It would turn a $36.00 beer build into a $54.00 beer build at minimum ($19.00 minimum "express shipping"). This is why I had to source grains etc locally and have come to the conclusion that most hardware I need I can also source locally.

If I can't and I need it that bad, there's always hopdawgs.ca, or homebrewsupplies.ca, or I guess in a couple months canadahomebrewgear.com again.

Basic ingredients are almost always best sourced locally. Heck, I get my grain in bulk from group buys (I have 250lbs in my basement!)

But homebrew-supplies.ca has a lot of stuff for the intermediate and advanced brewers that you'd otherwise have to order from the US.
 
Yup, I agree with that wholeheartedly :). Mind you with the service I just recently got from birdmanbrewing on here, gotta say I'd be entirely willing to order from them too even though they're not Canadian. Awesome service :).

Hey HappyHaxor, im new on here and am only an hour west of you. I was in Fredericton tuesday and took the plunge and bought everything I needed to start my brew from the Scoop'N'Save
