My brother in law has challenged me to brew my own white ipa. I got the inclination to go gluten free on it, somehow, maybe because it appears sorghum extract can be pretty light in color. But building a good ipa all about balance, and I wasn't sure how to get big body and stay white in color with sorghum. Maybe dextrose? Any thoughts?
