anyone ever tried to brew something like this? not a dunkel weisse, more of a wheat beer with a faint roast character and a big chocolate flavor together with the banana yeast coming through. Seems like it would be a good combo in theory but Im not sure how to go about coming up with a recipe. im thinking something like

40% pilsener malt
30-40% german wheat malt
8-10% black patent
5% chocolate wheat
remainder I think should maybe be some kind of crystal type malt

then I would think wlp300

any thoughts on this? do you think this would be gross?
 
I once did a dry stout weizen cross.
It came out fluffy and dry,roasty and wheaty. Nice.
No reason it wouldnt work. I would go for a yeast that gives a bit flavour wise,but not phenols.
 
Saw a YouTube review of a Porter Weisse. Schneider Weisse Tap X. Sounds awesome.
 
Brew up a traditional dunkel weisse and add some dehusked carafa II or III....
 
I'd be curious about more of a porter/stout than a weisse. Darker, more bitter, definitive roast / chocolate / burnt flavours, and some of the wheat and banana in the background.
