How high will the FG be?

  • 1.012-1.018 (quaffable)

  • 1.019-1.025 (chewy)

  • 1.026-up (need a spoon)

Brewed my xmas beer on Saturday on my new setup. It's stupid cold in my brew room currently, so I applied my normal insulation to the (BIAB) kettle.
Then to counteract heat loss, I set my induction burner to the lowest setting.

Plan was to mash at 70C to get a nice solid beer. At 45min, it was up to 74C, at which point I killed the heat and removed the insulation.


85% Castle Pale Ale, remainder is Pale Chocolate/Dark Crystal/Chocolate.
Seemed to convert really well anyway, so the OG hit 1.071.

Yeast was a partial repitch of 1968 at 1m/ml/degP, about 1 day old. On the last batch, this yeast hit 81%AA.

Ferment started at 18C, let rise to 20 for 3 days, then cranked up to 22 yesterday.

So the name of the game is, how high will the FG be?

And in the spirit of the week, I am thankful it will still be beer :tank:
 
Oh no, I am giving it a few more days. Then I will kill the heat and let it drop. Then I will cold crash it.

The krausen dropped yesterday. Like I said, I pitched a lot of very healthy yeast, so it moved quickly.
