Forgive me if this question has been asked/answered before, I couldn't find anything in a search. Is there any way to determine the amount of cells in a harvested yeast cake in a ball jar?
 
there are a few ways to get a rough estimate. neither of these is very accurate, but the only way to get an accurate measurement is do a cell count.
1. note the volume that the yeast cake itself takes up in a white labs vial. to do this, let it completely settle upright in the fridge. draw a line at the level of the yeast cake. later, after you have used the vial, measure the volume up to that point (use a squeezy pipet or whatever). that volume of yeast cake is around 100^6 cells or whatever it says on the vial. extrapolate to the volume of your yeast cake in the jar.
2. mrmalty.com yeast calculator 'repitching from slurry' tab. there's a slider for the amount of non-yeast gunk (break, hop, whatever) but no way to know exactly how much of this you have in your cake. again, it gets you a rough estimate which is usually good enough
