So I did my first all grain by myself. I hit all the expected numbers and volume, but I have had the beer in the fermentor about a week and it has only gone from 1060 to 1050. The only thing I can suspect is that I pitched the yeast into wort that was too hot (about 90 degrees). It was taking too long to cool and I ran out of ice so I just pitched it. If that is the case, what can I do at this point? Pitch a new vile of yeast? Thanks for the help!
