Sigh... So I have been asked by a co-worker to provide him with about 3.5 gallons of Muddy Creek Honey Chocolate Stout, a fine beer that I'm generally very proud of.

So Wig goes ahead and makes a rock-star batch of Muddy Creek and (in order to save some time) decides to directly pitch a package of Wyeast Scotch Ale yeast into the fermenter.

Things bubble nicely for several days, all is well. Muddy Creek sits happily in the fermenter for 3 or 4 weeks.

Wig checks the gravity because he wants to bottle the Muddy creek and horror of horrors, it's only dropped 20 pts. Why, oh WHY didn't Wig make a starter and ensure that he'd have strong, happy yeast. (Wig should have mentioned that he noticed that the Wyeast Scotch Ale package didn't swell like he wanted when he popped the smack pack and let it sit in warm water.)

So, Wig went ahead and purchashed another package of Wyeast Scotch Ale yeast and will try to add it.

Likely he will end up with weak, yeasty chocolate stout which makes Wig sad. Especially since he's been asked to provide this beer for a co-worker's party upcoming in a month or so.

Wig is SO distracted and distraught in fact, that he has been forced to refer to himself in 3rd person in order to distance himself from the shame and stigma attached to someone who has all the equipment, materials and know-how to make a very nice yeast starter, but didn't because he was impulsive and a bit lazy.
