I'm lautering my batch right now, but as I take gravity readings I'm expecting above 18 Brix (1.074), but getting readings from 15 Brix (1.060) and 18.5 Brix (1.076).
I did a mash infusion, so there was more water in the mash tun than usual. Are these fluctuation caused by the grain bed not being completely settled/packed?
The gravity got higher (about 18 brix) after I slowed the lautering WAY down (to dripping). Is this because the grain bed has had more time to settle?
