not new to hombrew but new to brewing a hefe.I brewed the austin homebrew bavarian hefe with wlp300 with a SG of 1.044. It has been in the primary for 9 days now. Past 3 days it has been at a consistant 1.010. So i thought it was pretty much done. I cracked the lid and there is a very thick layer of Krausen and looks like it is still working. I am a little confused. I tasted the brew and it seemed a little dry but not bad..So do i leave it for a few more days or bottle tomorrow?
 
Aging never hurts... Agitate it, you might be surprised by the activity it will pick up (not sure of your recipe, and the final gravity)...
