I ran across a great series of videos on YouTube called Grit & Grain. It's 10 short videos that Goose Island put out that detail the whole process of making their legendary beer. Episode 6 deals the most with the actual brewing (they use a 4 hour boil!) but they're all very interesting.

Good eye man! Target OG of.30! I can't even imagine brewing a beer that big but I'd love to try it sometime. Now for some smart person to figure out the ratios of that grain bill and convert it to a 5g recipe.
 
There's already a large clone thread that uses the scales recipe from these videos. If you want a recipe that already has all of the work done look there.
