Next week I'll be brewing with a friend of mine. We'll both be brewing the same recipe on our own systems, then pitching different yeasts. The two carboys will ferment side by side in my ferm chamber.

The beer is a basically a dry hopped light American Wheat but a little higher OG. One carboy will get T-58 and the other will get US-04.

What recommendations do you all have for a temp for these two yeasts? I'd love the T-58 to get spicy and the US-04 to get a little fruity.

RECIPE:

8# Two Row
4# White Wheat Malt
1# Vienna

Mash at 150F

1 OZ Pearl @ 60
1.25 OZ Cascade @ 15
2 OZ Centennial DH 7 days.

Both of those yeasts get pretty nasty at warmer temps. I do both between 60-63. T58 is great in a wit. 04 is great in most English styles, or also in American ales that you would like a little more character in.
