So I had a friend who brewed a nice hoppy Golden Ale from a kit he got at Oak Barrel Winecraft in Berkeley, when I lived out there. I loved it, and rather than order the kit, want to use it as a jumping off point to make something of my own. The kit uses Willamette and Cascade hops, and I'll probably sub in Simcoe for the Willamette. How does this sound? I'm particularly hoping for advice/affirmation of my hop schedule. This is my first go at making my own recipe, so I'm trying to keep it simple.
