I'm just starting to make a holiday ale that I had been planning on adding coriander to...except I just remembered reading somewhere (probably here) that certain types of coriander can cause celery flavors in the beer. The only coriander I have on hand I harvested from my garden after the cilantro went to seed. Should I use it? Anyone else used coriander from their garden in their beers? I can always adjust the other spices and not use the coriander, but any thoughts in the next 2 hrs or so would be appreciated.

If you harvested leaves from planted coriander seeds, you have cilantro. Unless you're looking for a Bud Chelada clone, don't put cilantro in your beer.

If you harvested the seeds, crush them, smell them, and taste them. If it's a flavor you want in your beer, go for it.
