Last minute plans to brew a stout later tonight with a friend. I have an ounce of Goldings, and an ounce of Fuggles, both in pellet form. I also have Fuggles on the vine, ready to use. The bitterness of this brew with just the pellets is a bit on the low end, so I was thinking of throwing is some fresh hops too.

Anyone try wet hops into a darker beer? I probably have 20-25 ounces (wet) on the first year Fuggles vine. What stage would you recommend adding them into the boil?

I will be starting this brew in a few hours...should I go for the addition of fresh hops, or keep it low bitterness? It would only end up being about 20 IBU's in a 5.2% beer without the freshies.

I'd do what I had to to get the IBUs up. If you have fresh, use 'em!

And, if you are worried about wort absorption, I have three words for you:

Squeeze! Those! Hops!
