Currently living in France until June and I've got access to some Breton apple juice at my finger tips. Has anyone used the infamous french apple juice and fermented it out?
 
Probably the best tasting fresh juice out there due to the naturally high tannin and sugar content. Makes for delicious cider once fermented, but can be often lacking in acidity for the common American palate.

If you're going to try and take it dry you may need to add some yeast nutrient, since most Breton cider orchards use low levels of fertilizer on the trees, resulting in low nutrient juice.
